Spread mashed potatoes over top and using the back of a spoon, make decorative swirls over the top. Apparently the word cottage was a term associated mostly with the poor. This was a very tasty shepherds pie, and I loved the squash, sweet potato and white potato mash on top. In a large, oven-safe casserole dish, smooth a layer of half the potato puree, a layer sausage sauce, mozzarella, then the remaining potato puree. Sprinkle the top with parmesan cheese and chopped parsley. Traditional shepherd's pie is made with ground lamb or beef. This vegetarian version uses fall vegetables.
